Made by Xavier & Guillaume Baracand in the village of Chatillon St Jean, this is one of our more punchy goats cheeses as it ages. Xavier & Guillaume farm around 60 hectares and have 300 Alpine goats. The range of aging for Picodon is one of the largest of all French goats cheese from fresh to extremely matured to the point of dessication. We tend to like this lactic cheese when it is still a little youthful. On the younger side, this can mean a sweet cream flavour with just a hint of animal about it but as it ages the capric flavours and acidity increase dramatically while the texture may dry, become fudgy or even become soft. Either way this is a rewarding cheese to eat.
