Our Parmigiano Reggiano is selected and aged by 5th generation maturer Giorgio Cravero, who is based in the Piedmontese town of Bra, home to the Slow Food Movement.

He works with a handful of farms from the traditionally designated Emilia Romagna region, who pay particular attention to maintaining the succulence of their cheese by careful handling of the curd. This enables them to meet the specific texture and flavour profile Giorgio defends and desires: 'soft and sweet'.

Our favourite parmesan

My family gets through a ridiculous amount of parmesan in a week, and this is by far our favourite. It does last quite a while…although rarely gets the chance in our house.

Really good Parmigiano makes a huge difference

I’ve been a fan of this Parmigiano for years but recently we’d run out and it wasn’t time to make a cheese order again so we ended up buying some in the supermarket. So good to have the real deal again. Makes everything better from just eating shavings dressed with olive oil to the extra flavour it gives to pasta or risottos.
