Made at Fromagerie Duroux in Rillac-Xaintrie, this cheese derives its name because its maturing age lies between that of Cantal Jeune and Cantal Vieux. The

Fromagerie Duroux has been a family business since 1936 when Louis Duroux began to make cheese from the milk of his Salers cows. Paul Duroux, his son, expanded the business to collect milk from local, small producers and under his time at the company they also acquired an old railway tunnel which they converted to a maturing cellar. Now the company is under the steerage of 3rd generation, Jean Duroux.

They are a larger concern these days, buying milk from 50 small farms within a 30km radius of the dairy, but their attention to detail and quality is meticulous. They collect the milk using their own vehicles, meaning the control over milk tank cleanliness is kept within the business. They take samples at each farm and perform daily quality testing, and the cheese is made with milk fresh from the morning’s collection.

Their Cantal Entre Deux, which is matured between 90-210 days, has a soft crumble to its texture and tastes pleasingly curdy and buttery with a savoury marmite note.
