Hailing from the Luberon moutains in Provence, Castillon Affiné is a raw milk cheese made by David and Fanette Ladu with milk from their flock of 120 Sarda Sheep.

Originally a Sardinian breed, the sheep were brought over by David's grandfather after he decided the similarities in the relief and climate of the Luberon foothills would make an apt home from home. Aged a few weeks longer than their younger counterpart (Castillon Frais), the Affiné has a rich texture and slightly more sheepy flavour whilst retaining an intriguing hint of celery on the finish.
