Just as in the French Jura, tradition dictates that winter milk is made into Vacherin while summer milk is made into Comte, so it’s also true that in the Swiss Jura the same relationship exists between Vacherin and Gruyere. Vincent Tyrode who makes this Vacherin is the owner & head cheesemaker at the Fromagerie Tyrode in L’Auberson, our favourite Gruyere producer.

His Vacherin is sweetly creamy, spectacularly silken, gloriously gooey and has the just the right dose of the sprucey character we love.

You'll notice on the box there's a depiction of a Milk Thistle. The French name for this is Chardon-Marie. Milk Thistle grows in the pastures where the cows graze but it's an appropriate emblem for another reason. The year Vincent began to make Vacherin is the year his daughter was born. His daughter's name? Marie.
