In his native Australia, Dave Holton made a marinated Persian style Feta cheese which was very popular. When he settled in the UK however, he realised there wasn’t an equivalent and Graceburn was born. The curd is made, pressed and brined before being cut into cubes, placed in jars in a marinade of rapeseed oil, garlic, thyme and black pepper. The jars mature for a week before sale. In accordance with their principles of buying local and sustainable ingredients, Graceburn is made at Boar Place, an estate near Chiddington in Kent where their milk is produced and the oil used for the marinade is farmed to high environmental standards and extracted at Duchess Farms in nearby Hertfordshire. Graceburn is delicately flavoured from the aromatics in the marinade allowing the quality of the cheese to shine through as well with soft, crumbly texture and milky sweetness
