Made by David Halton at Blackwoods Dairy on Commonwork Organic Farm in Kent, a regenerative dairy farm whose pasture fed herd graze on land rich in herbal lays creating beautiful milk for their cheeses. Australian born David, who first made cheese in the Yarra Valley developed this lactic set washed rind cheese and named it after one of the convicts sent out to Australia for stealing cheese.

Edmund Tew has a rich, fudgy paste and its flavours range from lactic and milkily acidic in its core to smoky, rich and meaty.
