After years cheesemaking in Provence, Yannick and Cyril Borel moved their 150 Rove goats to the mountains of Ardèche in search of less intense summer weather. Now settled in the commune of Saint Victor they are once again producing cheese.

Dragonnet is a mixed coagulation cheese, which means it is not as acidic as the classic lactic goats’ cheeses. The cheese is made with fresh milk, and the curd is drained in fine mesh sacks before moulding. We receive them at around 3 weeks old when they have a fine, wrinkled geotrichum rind and a beautifully toothsome yet creamy texture. Rove goats have particularly rich milk, and this is shown off perfectly in this gentle cheese which allows the sweet, milky, buttery flavours to shine accentuated by a hazelnut note from the rind.
