Camembert Fermier

Made by Xavier Cassignol and his wife this is part of an emerging scene of new farmhouse cheesemakers returning to making Camembert. Xavier was a cheesemaker at a large Camembert maker, Grandorges, and they have supported him in his move to farmhouse production by providing one of their former creameries for him to use. He & his wife farm 115 Normande breed cows. Their cheese is rich and complex with a lovely animal, straw-like quality on the rind and a richly vegetal, garlic quality in the softly supple paste.
