Our Gruyere Suisse AOP is matured at the Fort de la Tine, on the Fribourg/Vaud border in Switzerland. We select our Gruyere from a small series of producers in the Jura mountains, bordering France in the west of Switzerland. All work on a modest scale compared to most Gruyere producers, making something in the region of twenty cheeses a day. We find the producers of this region make a particularly fine, moist, pronounced paste. Our Gruyere du Jura Suisse AOP is extremely versatile; equally at home on a cheeseboard or in a sandwich, as well as being a brilliant melting cheese. We sell wheels at 18 to 24 months, when we find that the flavours have boldness and breadth, whilst maintaining a smooth texture.
