Hailing from the Luberon moutains in Provence, Castillon Frais is a fresh raw milk cheese made by David and Fanette Ladu with milk from their flock of 120 Sarda Sheep.

Originally a Sardinian breed, the sheep were brought over by David's grandfather after he decided the similarities in the relief and climate of the Luberon foothills would make an apt home from home. This vibrant cheese strikes a distinct lactic note which gives way to hints of freshly pressed grape must and an intriguing celery, fenugreek finish.
