Made by Fraser Norton & Rachel Yarrow on an Earth Trust farm in South Oxfordshire. Rachel & Fraser happened upon an article on cheesemaking while on holiday in Sicily and from there the dream was born. Both had farming in their family history but rearing goats and making cheese was a new development. Leaving careers in teaching and project management, they collected together a herd of Anglo Nubian goats (known as the Jersey cow of the goat world for the richness of their milk) and began to make their pyramid shaped cheese. With rich, red berry acidity and a nutty yeasty rind, this is a nuanced and complex cheese and delicious with it.
