Nicola makes her chilli jams with fresh chillis, her chilli jams not only have heat but also a distinctive fruitiness conveying the flavour of each variety of chilli.

Fireflame Chilli Jam:

Fireflame chilli jam pairs well with fresh or milder cheeses such as lactic goats cheese or Ossau Iraty.

Jalapeno Chilli Jam:

Jalapenos have a distinctive cool green quality that is discernible alongside the heat. The spice of Jalapeno chilli jam pairs well with cheeses that have a pronounced flavour in their own right such as Cantal or Gruyere and are up to the competition. It also works nicely with softer bloomy rind cheeses like a gutsy Brie or Camembert.

Lemon Drop Chilli Jam:

Lemon Drop chillis have a burst of citrus before the heat builds up. This is not a chilli jam for the faint hearted but if you like heat it becomes quite addictive. This chilli jam pairs well with cheeses that also have a kick like Cantal, Gruyere or something completely fresh as a contrast like a St Felicien or St Jude.
