Made by Luigi di Lello on his farm Fattorie di Tratturo outside Chieti. The name of the farm is taken from the Trattura, the road followed by the shepherds during the annual transhumance from the mountains of the Abruzzo to the plains of Puglia where the flocks would winter. This path passes directly outside the farm. Salsiccia del Vastese is made from loin, shoulder & leg of pork seasoned with chilli and fennel. The heat of the salami depends on the weather at the time Massimo picks the chillis. A hot summer can result in more intense heat so these can sometimes pack a punch.
