Matthieu Dumarcher opened his winery in 2006 having previously worked as an oenologist for mass marketed wines. He realised that their reliance on chemicals, high yields and working against rather than with nature was not the way forward for him. Matthieu’s grapes are harvested by hand and part destemmed, part left in bunches for carbonic maceration.
The wine spends 12 months maturing in stainless steel and no yeasts are added. This is a super fresh Grenache / Syrah blend with gentle spice and rich, jammy fruit. Pairs well with Tomme de Chambrouze or Perail - think jam, yoghurt, cream flavour combinations.
