Corinne & Paul Gillet make this exceptional wine on the south banks of the River Cher in Pouille. They took over the Domaine in 2013 from Michel & Beatrice Auge who had converted to organic in the early 90s. They harvest fully ripe grapes from old vines (between 30-60 years) and process without additions, using the natural yeasts and handling the grapes gently.
The juice is macerated on skins for 1 month and aged in old barrels for 1 year before bottling. Surprisingly for such a long maceration time, this wine has striking elegance and delicacy. Some of the heady aromatic qualities of Sauvignon are there but in a very different guise: ripe orange, stone fruit, quince and sugared almonds and a tiny hint of aromatic herbal bitterness keeps the richness in check. Pairs exceptionally well with Beaufort or Gruyere.
