The family Guillot Broux were one of the first adopters of organic production in France in 1954. They had suffered persecution in World War 2 and when, after the way, agriculture was encouraged to use nitrogen fertilisers and other chemicals in order to get through the surplus that had been manufactured for warfare, they decided they had to do the opposite. The Domaine Guillot Broux was set up in 1978 and is currently managed by Emmanuel Guillot Broux who in his spare time writes graphic novels as another string to his bow.
The Macon Villages is vinified without additives using indigenous yeasts and aged for 6 months in vats and 6 months in oak barrels. It has a rounded character, slightly syrup like in the mouthfeel with flavours of ripe peaches, yellow plums and a restraining minerality plus a fresh, bright finish. Its rich fruitiness pairs well with Comte, 1924 & Montgomery’s Cheddar.
