The Holdens at Bwlchwernen Fawr, where Hafod Cheddar is made, have been fully committed to organic farming and sustainability for over 40 years.

Their remote, hilly location drove the choice of hardy Ayrshire cows which are considered one of the best UK breeds for cheese. Although newcomers to cheese-making, they espouse an authentic, traditional recipe which dates back to the 1920s. They've also chosen to return to a natural, rather than clothbound, rind. Hafod is a pliant-textured, creamy cheddar with flavours that range from strawberry-yoghurt acidity to structured, grassy and vegetal.
