David and Helene Barrault have been making wine on their estate since 1997. Production has been organic since 2008 and was certified in 2014. Their grapes are harvested & destemmed by hand before pressing and under to a cool maceration of 8-12 days for gentle extraction before aging for 8-10 months in concrete tanks and bottled without being filtered.
For a Merlot this is on the lighter side with redcurrant and flavours of gentle but aromatic herbs like basil. It has medium tannins and is slightly dry. Pairs well with Kirkham’s Lancashire & Duckett’s Caerphilly
