Sparkenhoe Blue is a Stilton recipe blue cheese produced with unpasteurised milk and made by Will Clarke, the son of David and Jo, on Sparkenhoe Farm.
After college in late 2017, Will began making Sparkenhoe Blue. As a raw milk cheese, Sparkenhoe Blue cannot call itself a Stilton but it shares some of its techniques with Colston Bassett Stilton, including hand ladled curd. Sparkenhoe Blue has subtle blueing and is pierced sparingly, giving it a gentle and quite milky flavour profile. Its texture ripens out to a fudgey consistency.
