After moving to Butford Farm in Herefordshire in 1999, Janet and Martin Harris set about converting their smallholding to organic, working only with freshly pressed juices and fermented with wild yeasts ever since. The 2020 vintage of their single varietal Dabinett cider represents the continuation of a long tradition of cider making on the farm; the family operate from 300-year-old barns.
It is a dry, still cider with a beautiful marmalade-like colour. On the nose there is a jammy richness and just a hint of tannin. Those chewy tannins come through on the palette, as does an intense apple flavour and just a little orange.
